In a dynamic system, a state that can be maintained in general terms.

Absolute stability is a purely theoretical condition for any system, because it must always be capable of adapting to even slight variations of its environment.

A stable state is thus a state permanently constrained within a more or less narrow channel of fluctuations which do not impair its structures and functions in a noticiable way.
